All About High Protein, High Fiber, High Flavor

Some days you just want to eat some food that tastes great, without it being too heavy… or a complete nutritional wasteland. Maybe you have some new fitness or nutrition goals. Maybe you are feeding folks who do. This meal will satisfy both taste buds and health goals.

It can be hard to find a really terrific, delicious meal to support friends and loved ones with specific eating goals. This meal might be just what you are looking for.

As usual, I prepared this meal with an appetizer, main course, and dessert. And as usual, scale recipes up or down as needed. This meal feeds up to four people with some leftovers, although you may want to grill two pork tenderloins to ensure you have enough leftover pork. I did not include a specific bread recipe, but instead recommend a rustic, whole wheat sourdough. A simple dessert of fresh berries with whipped cream and shaved dark chocolate finish the meal.

The leftover transformations are some of my favorite. Southwest Pork and Veggie Bowls are so easy and really keep the good nutritional vibes going. Clean Out the Fridge Empanadas can be made with virtually any leftovers, but are especially great for this week. Enjoy.
