All About Comfort Food

What is it about comfort food that makes us feel so nourished inside and out, body and soul? We all have our own ideas of what makes comfort food, comfort food. These are a few of mine.

And what’s more comforting than my view: “why cook once and eat once, when you could cook once and transform it into other meals?” Long ago, my mother wrote menus out by hand for our family, two weeks at a time, in her elegant script. As a child, I misread her “reruns” and thought she’d written “ruins,” which was my view of leftovers at the time.

I may not have thought much of leftovers as a kid, but as an adult, I consider them sacrament.

This I prepared a dinner party meal involved an appetizer, main course, and dessert. Then I transformed what was left of this meal into two others. You may need to scale the recipes up or down, based on how many you are feeding. The work you put into the first meal is sure to impress, and everyone will appreciate the thoughtful ways you reimagine each course into new and fun meals for the whole family.
