This chocolate cake, from my Grandma’s recipe box, is fun to make, with mayonnaise replacing some key wet ingredients. Paired with the Butter Frosting Recipe, also from the recipe box, this is a delectably chocolatey cake without being too sweet.

2 c. all-purpose flour

1 c. sugar

2 t. baking soda

5 T. Dutch-processed cocoa

1 c. water

1 c. mayonnaise

1 t. vanilla

Sift together dry ingredients. Add sugar, water, mayonnaise, and vanilla. Mix well. Pour in greased 9×13 pan and bake for 20 minutes at 350 degrees.

Butter Frosting

1/3 c. soft butter

3 c. sifted powdered sugar

3 T. heavy whipping cream

1 1/2 t. vanilla

3 squares unsweetened chocolate, melted and cooled (but still mixable)

1 egg yolk, beaten

Blend butter and powdered sugar. Add cream and vanilla. Mix in chocolate, then egg yolk. Beat thoroughly until fluffy.
